Overlooking the Val de Tires, Vigna Rachtl is sits at 1,935 – 2,066 feet above sea level. An extremely steep slope protects the vines from stiff northerly winds and a high content of gray porphyry in the soil composition is unique in the area. It is this distinctive geology of site which gives Rachtl Sauvignon Blanc Riserva its distinguishing character—a nose that gives aromas of flint and salty minerality with clean, crisp acidity on the palate. Rachtl Sauvignon Blanc Riserva is allowed to macerate for 8-12 hours before gentle pressing followed by a fermentation in large wooden barrels where the young wine will remain for almost one year, although malolactic fermentation is not permitted. Following this, the wine is transferred to stainless steel tank and allowed to clarify through natural sedimentation. An additional 12 months of bottle maturation then takes place at the winery.

About the Vineyard

The topsoil comprises moderately silty sand with high salt levels and low humus content. A striking feature of the site is the presence of gray porphyry. The deeper soil horizons are dominated by sandy limestone rock flour. The geology of the site gives the wine its specific character: minerally flint nuances on the nose and salty-minerally on the palate with a clean and fresh acitidy.

Wine Production

The grapes are harvested at full maturity, when the acidity levels are still remarkably high. After a maceration period lasting eigth to twelve hours, the berries are gently pressed. For alcoholic fermentation, one half of the must is placed in tonneaux barrels and the other half in big wooden barrels, where the young wine remains for almost a year. This process gives the wine its smoothness and structure. To maintain the minerality of the wine, care is taken to avoid malolactic fermentation during this period. The assemblage then spends six months in a stainless steel tank for natural clarification. Finally, the wine is allowed to mature for a further twelve months in the bottle.

Tasting Notes

Rachtl Sauvignon Blanc Riserva at first presents itself with restraint before revealing its complex potential in the glass. The initial minerally aromatic structure comprising flint, graphite and slate is gradually complimented by notes of dry hay and exotic fruit. This delicate and harmonious wine, with its bright straw yellow color and greenish reflections invigorates the palate with a clean, fresh acidity and briny salinity.  A long lasting and balanced finish underscores this wine's poise and elegance.

Food Pairing

Enjoy Rachtl Sauvignon Blanc Riserva with fresh shelfish, freshwater and smoked fish dishes, lighter meat dishes that incorporate seasonal vegetables.
